Deba
Deba is the traditional single-edged knife for cutting whole fish and poultry. The thicker, more resistant lower part of the blade is used to cut hard parts such as fins, fish heads or poultry cartilage and carcass, while the thinner upper part is used for filleting or boning. The deba comes in different lengths and also has variants such as ai-deba or mioroshi.
